How do you make a “cauliflower mash potato” worthy of it’s name? I have tried many versions and have created what I consider to be a smooth and creamy equivalent bursting with flavor. My secret ingredient? Chickpeas, but only a little to help create some thickness and add a bit of nutty flavor. I really enjoyed this meal because it left me filling full knowing I was eating a low carb, low fat and protein rich meal with the benefits of nutrient rich cauliflower.
Here is my recipe:
- Sautée the 1/4 onion, 1-2 cloves of garlic and 2-4 cups of cauliflower until soft and lightly browned.
- Puree all together along with 1 tablespoon of butter, 1/4 cups of chickpeas, splash of milk or almond milk.
- Season to taste with salt, pepper, little extra garlic powder if you like it garlicky like me and herb de provence spices
